Perpetual has been created in homage to the old vinos de guarda, wines capable of defeating time & therefore suitable for laying down. Howewer, Perpetual already reveals its elegance & harmony today & is notable for its great aromatic complexity. After the success of Torres' first Priorat wine, Salmos, the family decided to make a flagship wine for the Priorat winery that would show its commitment to the area. Perpetual is a wine born of time & the l&. Old Garnacha & Carinena vines planted on steep slopes of licorella slate form the essence of this wine from the Torres family estate. After a long ageing process, kept for 16 months in fine-grained French oak barrels, the bottles are finally laid down in the darkness of our small El Lloar winery until the desired balance is achieved. Perpetual is a homage to the Priorat wines made to be cellared. An intense wine, full of character, that was born to conquer time. Very dark, intense ruby colour. An aroma of preserves (cherry, blackberry) & spices on a highly characteristic mineral base. On the palate it has great volume with an admirable balance between the wine's fruity density & its spicy notes acquired through ageing in new oak (cedar, toast). During its prolonged, complex finish there's also a hint of chocolate & tobacco. Excellent with game, lamb stews & also with pressed cheeses such as Manchego, Roncal or Mahones. This Wine is a homage to the monks of the courageous carthusian order, who arrived in Priorat, in 1095, where they cultivated vines. In 1835 a violent crowd destroyed the work of a lifetime & sacked the monastery, events which later culminated in the auctioning of church lands known as the Desamortizacion de Mendizabal. In 1996 the Torres Family began work on the planting of vineyards on the slopes strewn with the hard, black slate-like Licorella stone. Made by the Torres family & coming exclusively from our vineyards located in the municipalities of Porrera & Lloar, Salmos is a Priorat wine that manages to achieve an unparalleled balance between power & elegance. Dark in hue & almost opaque, it is fragrant & mineral on the nose while on the palate it is luxurious & oily, but also silky & with a long finish.
