The fruit for this Skillogalee Shiraz was handpicked from low yielding, unirrigated vines growing on the slopes around the homestead, around 450m above sea level. The fruit was destalked & partially crushed, fermented in open tanks with submersion boards to ensure the emersion of the skins for maximum colour & flavour extraction, & then gently basket-pressed. Malo-lactic fermentation took place partially in tank with completion in barrel. Maturation for 20 months in a combination of French & American oak hogsheads has added considerable balance & complexity. This wine has been bottled using a Stelvin Closure in order to maintain it's ripe fruit characteristics & guarantee it's quality when the bottle is opened. Limited stock.
