Shows the unmistakable floral, rose petal aromas & flavours of pure Gewurztraminer fruit, sometimes also reminiscent of passionfruit or lychees. It has a strength of character without being oily or overpowering, is intensely fruity but dry on the finish & has good balancing acidity. The perfect accompaniment to spicy Eastern dishes where its ripe fruit & textured mouthfeel are a great foil to strong spices. The Clare Valley is perfect for ripening aromatic white varietals as the evenings are quite cool & help to build up intense aroma compounds. Fruit is sourced exclusively from the Skillogalee estate, the vineyard yielding around 35 hl/ha. After harvesting, the grapes are allowed a few hours skin contact before crushing & chilling with an overnight settle in tank. The juice is racked off the gross lees & fermentation continues at a cool, controlled temperature in tank. Bottled in June 2004 then aged in bottle before shipping. Only 400 cases made annually.
