- 12 years. The fruit comes from un-irrigated, h&-pruned & h&-picked vines grown at Skillogalee at around 450m above sea level. The wine was made in open fermenters & then basket-pressed. Malo-lactic (secondary) fermentation & maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended & bottled. The fruit for this Skillogalee Shiraz was handpicked from low yielding, unirrigated vines growing on the slopes around the homestead, around 450m above sea level. The fruit was destalked & partially crushed, fermented in open tanks with submersion boards to ensure the emersion of the skins for maximum colour & flavour extraction, & then gently basket-pressed. Malo-lactic fermentation took place partially in tank with completion in barrel. Maturation for 20 months in a combination of French & American oak hogsheads has added considerable balance & complexity. This wine has been bottled using a Stelvin Closure in order to maintain it's ripe fruit characteristics & guarantee it's quality when the bottle is opened. Limited stock. ...

The wine is pale straw yellow in appearance with green tinges. Exotic aromatics of orange blossom & quince with ginger spice & orange zest follow through onto the palate which is slippery & round with fruit sweetness, balanced by refreshing, juicy acidity & a lingering, dry finish. The wine shows fresh raspberry & cranberry on the nose. The palate is fresh & lively, held together by a fine structure of natural acid & fine tannin balance. This wine is best served chilled, especially during the warmer months & is a great match for most food styles, particularly fresh seafood & contemporary Asian cuisine. All fruit was blended at the receival bin, destemmed & chilled to 5 degrees C. To achieve the desirable level of colour & flavour extraction the fruit was left on skins for 16 hours in the press. The free-run juice & light pressings were then cold settled, racked & fermented cool to express the clean fruit characters of both the Cabernet Sauvignon & the Malbec. Shows the unmistakable floral, rose petal aromas & flavours of pure Gewurztraminer fruit, sometimes also reminiscent of passionfruit or lychees. It has a strength of character without being oily or overpowering, is intensely fruity but dry on the finish & has good balancing acidity. The perfect accompaniment to spicy Eastern dishes where its ripe fruit & textured mouthfeel are a great foil to strong spices. The Clare Valley is perfect for ripening aromatic white varietals as the evenings are quite cool & help to build up intense aroma compounds. Fruit is sourced exclusively from the Skillogalee estate, the vineyard yielding around 35 hl/ha. After harvesting, the grapes are allowed a few hours skin contact before crushing & chilling with an overnight settle in tank.
