Limited stock. This Cabernet blend is another dark, rich wine in the Skillogalee tradition, with intense colour & powerful, warm aromas & flavours. The wine is full & soft with sweet, leafy fruit flavours, rich vanillin oak & firm drying tannins on a lingering finish. Ideal with grilled or roasted red meats & game dishes. This vintage has a backbone of natural acidity that will repay cellaring for 10
- 12 years. The fruit comes from un-irrigated, h&-pruned & h&-picked vines grown at Skillogalee at around 450m above sea level. The wine was made in open fermenters & then basket-pressed. Malo-lactic (secondary) fermentation & maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended & bottled. Grape: 70% Cabernet Sauvignon, 25% Cabernet Franc, 5% Malbec.
