The fruit for this Skillogalee Shiraz was handpicked from low yielding, unirrigated vines growing on the slopes around the homestead, around 450m above sea level. The fruit was destalked & partially crushed, fermented in open tanks with submersion boards to ensure the emersion of the skins for maximum colour & flavour extraction, & then gently basket-pressed. Malo-lactic fermentation took place partially in tank with completion in barrel. Maturation for 20 months in a combination of French & American oak hogsheads has added considerable balance & complexity. Limited stock. This Cabernet blend is another dark, rich wine in the Skillogalee tradition, with intense colour and powerful, warm aromas and flavours. The wine is full and soft with sweet, leafy fruit flavours, rich vanillin oak and firm drying tannins on a lingering finish. Ideal with grilled or roasted red meats and game dishes. This vintage has a backbone of natural acidity that will repay cellaring for 10 - 12 years. The fruit comes from un-irrigated, hand-pruned and hand-picked vines grown at Skillogalee at around 450m above sea level. The wine was made in open fermenters and then basket-pressed. Malo-lactic (secondary) fermentation and maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended and bottled.
