This vintage has a backbone of natural acidity that will repay cellaring for 10
- 12 years. The fruit comes from un-irrigated, h&-pruned & h&-picked vines grown at Skillogalee at around 450m above sea level. The wine was made in open fermenters & then basket-pressed. Malo-lactic (secondary) fermentation & maturation took place in predominantly French oak hogsheads for around 24 months, before the separate components were blended & bottled. The fruit for this Skillogalee Shiraz was handpicked from low yielding, unirrigated vines growing on the slopes around the homestead, around 450m above sea level. The fruit was destalked & partially crushed, fermented in open tanks with submersion boards to ensure the emersion of the skins for maximum colour & flavour extraction, & then gently basket-pressed. Malo-lactic fermentation took place partially in tank with completion in barrel. Maturation for 20 months in a combination of French & American oak hogsheads has added considerable balance & complexity.
