Royal Dock is a Navy strength gin based on the style of gin supplied by the Hayman's family & previous generations under the mark Senior Service Gin to both the Royal Navy & the merchant trade from 1863. Based in London, they delivered to the Royal Victoria Yard at the Royal Dock, the largest of the three Admiralty Victualing Yards who were responsible for the provisions on board. Gin along with Rum was an essential part of the cargo on voyages around the world This Navy strength gin, bottled at 57%, reflects the strength required to enable gunpowder to still light if the gin were spilt on it. They named this style Royal Dock after the yard of the same name, located in Deptford on the Thames in South London, which was established in 1513 by Henry VIII. The Royal Dock yard was the largest of the Admiralty in Engl&, with the other 2 in Gosport & Plymouth. Over the following four centuries the Royal Dockyard became a storied location & the point of departure for some of the most significant ventures in British naval history. Deep, dark intense ruby colour. Red plum & black cherry fruit with a hint of cinnamon. Rich & muscular with mineral, black berry fruit & dark chocolate on the finish. Harmoniously composed of sufficient of each of the five main Bordeaux varieties to ensure none dominates. This wine shows a consistent, linear flavour profile. Each variety was harvested separately from specially chosen vineyards in the Stellenbosch area. The resultant cuvee is called De Compostella (' The Compilation of Stars') & the aim was to make each of the five components able to stand as varietal wines. The wines were tasted blind after one year in the barrel & the blend was then constructed in descending percentages, from the wine which rated highest to that in 5th place. Each variety spent twelve months in barrel as a single varietal before the wine was blended together. Thereafter the blended wine was matured for another twelve months giving a total of twenty-four months in barrel, a third of which was new French Oak, a further third in 2nd fill & a final third in 3rd fill French Oak barrels.
