Deep violet in colour, this Cabernet Sauvignon reveals a nose of dark fruits, violets, a hint of black currant & blackberry & fresh balsamic notes. Full-bodied on the palate, it has ample savory fruit, a smooth texture & a lengthy, pure finish. Ideal to serve with dishes prepared with red meats & game cooked in a plow disc, stews & hard cheeses. This Cabernet Sauvignon is the result of a careful selection of plots 29, 20C, 21 & 24 of our Las Palmas estate. The mild climate of this area, with cool nights, a medium temperature range of 13 Deg C & an average temperature of 20 Deg C during the month before harvest, allows for a slow & complete ripening process. The 25 year old vineyard, the clay loam soils with boulders 80 cm deep & an appropriate canopy management result in balanced plants that reflect an elegant wine with great fruit concentration, ripe, silky tannins, & an excellent aromatic expression.
