Aerating amplifies these scents but also reveals cumin & spices. Full bodied & well integrated with de defined vinocity. The palate mirrors the nose but with distinctive spicy character. A classic Gewurztraminer profile & good long finish. Food Matching: Asian, Indian & Chinese Cuisine, Seafood (Crab), Munster Cheese. The majority of Gewurztraminer grapes are sourced from the Bollenberg & Bux vineyards. The remainder is made up with grapes from the young vines in the Grand Cru vineyards. After slow pneumatic pressing the must is left to settle on the lees. Fermentation takes place in temperature controlled tuns for between 1 & 4 months. The wine is then left to age for a further 6 to 8 months on the lees. Probably the most renowned wine in Alsace, Traminer comes from the North of Italy & dates back to the 16th century. We perceive dominant complex, fruity aromas, with golden apple, pear & a fine vegetal touch. Airing enhances the previous aromas & reveals citrus flavours of lemon & tangerine along with a complex floral note. The onset in the mouth is moderately rich, with a balanced alcohol support. The wine evolves in a medium with strict liveliness & a sparkling note. A long-aged grappa from Domenis, this Riserva has a big, full, spicy profile, with a lot of vanilla & oak tannins rounding things out. Completely unexpected, but very strong, orange aromas of all kinds: aged orange liqueur, orange oil, bitter dark chocolate orange. Fascinating. Also quite a lot of oak. Intense. The citrus character is still there but the oak is more dominant on the palate, with drying oaky tannins doing battle with clove, pepper & hot chilli heat. Very very long, slightly drying as the oak takes hold. The clove & chilli ensure plenty of heat. The oldest of the Domenis range is also the fullest & the spiciest. The oak has a big presence here as well, but the texture is so good that this is all achieved without a suggestion of harshness. ...

A very elegant, restrained grappa aged in ash instead of oak to produce a more delicate, subtle style. Domenis Sogno di Dama is definitely a grappa in touch with its feminine side. Quite reserved initially. Peppery, with faint floral hints. Some winey notes & a sappiness. Citrus & sweetpea. As always, this has a quite generous texture, but the flavours are very much more restrained as compared to some of the other products in the Domenis stable. There is a light floral palate, with a woody character, but really its all about the mouthfeel. Medium-length. Elegant, floral. A restrained, demure, feminine grappa. ...
