Colour: Bright lemon yellow with green reflections & good intensity. Nose: A distinguished nose dominated by mature fruity scents of citrus & candied lemons & floral hints. Delicate & fresh. Palate: Fresh & well balanced. Delicately spicy with citrus fruits, candied lemon & hints of ginger & a long finish. Food Matching: Seafood, Caviar, Sushi, Fois Grais, Pork, Chicken, Veal, Medium Spiced Curry, Chinese, & Thai Dishes. The Riesling is mainly planted in the Bollenberg plot & also in the Grand Cru vineyards of Saering & Kessler. Some younger vines are planted in the Grand Cru Kitterle plot. After slow pneumatic pressing the must is left to settle on the lees. Fermentation takes place in temperature controlled tuns for between 1 & 4 months. The wine is then left to age for a further 6 to 8 months on the lees. Riesling is Alsace's noblest & finest grape variety. Although it was introduced in the 15th century by the Rhinel&, it actually originates from the Orleanois region. It is very different to its German counterpart & from the numerous Rieslings that can now be found throughout the world.
