The grapes for the Moon Mountain Chardonnay are sourced from both our own vineyards & a number of high end vineyards around the Hunter Valley. Fermentation of the juice began in stainless steel tanks before the partially fermented juice was transferred to new, two & three year old seasoned French oak barriques (225L) & puncheons (500L). After fermentation, the wine received some lees stirring to enhance the palate structure & texture. No malolactic fermentation used. A medium bodied, fruit driven style that still exhibits crisp citrus & white peach flavours, with a palate that has gained some extra texture from extended maturation on yeast lees. The freshness of this chardonnay makes it a perfect companion to seafood, chicken or pasta dishes. Excellent drinking upon release & will develop bottle age complexity. ...

A more textural style of semillon than we commonly make due to the basket pressing & minimal juice clarification. The fruit & acid are in perfect harmony & an incredibly forgiving texture makes the wine very attractive even at such a young age. The fruit was hand picked & then immediately basket pressed. The juice was cold settled naturally for three days before being racked & fermented on partial soilds. This is due to the fact there was no enzyme used in the juice clarification process. This aims to build more texture into the wine. After fermentation the wine was matured in tank until bottling. ...

The oldest & most reliable blocks were targeted for this blend. The grapes were picked then transported to the Hunter Valley for vinification. A pre-soak as the must warmed, fermentation at 25 C & post ferment skin contact time took a total of 20 days, to fully develop tannin structure, flavour & balance. After fermentation, the wine was matured in high quality, tight grain French oak barriques for twelve months before barrel selection took place. The remaining best barrels were matured for a further twelve months before bottling. Deep garnet red in colour, the aromas are dark & brooding with hints of chocolate & plum lifted by cinnamon spiced French oak. All the dark fruit flavours are framed on the palate by rich, layered fruit tannins, tight powdery fine grained oak & the classic mineral texture you get from great Heathcote wines. Starting to hit its straps now, it will also reward with careful cellaring. ...

Tyrrells - Moore's Creek Chardonnay 2012 6x 75cl Bottles

Grapes were harvested at different times during the picking season. Some were harvested early to retain clean, fresh acid characteristics. Other chardonnay grapes were harvested later in the season at optimum ripeness to create a rich, full bodied flavour. Once cold settled, the juice was transferred to stainless steel tanks for fermentation. Portions of the blend were matured in small French oak barrels to further enhance complexity. This wine exhibits peaches and stone fruits on the nose and palate, while the subtle use of oak combines well for a refreshing but full mouthfeel. Moore's Creek Chardonnay has been designed for immediate enjoyment and will complement fresh salads, seafood dishes and creamy pasta dishes.
