Colour: Pale yellow & clear. Nose: Sour apple, hawthorn & white flowers. Mouth: Fresh & well-balanced. The grapes are pressed as soon as they arrive in the cellars. The must is cold racked for 24 hours. Running water regulates the fermentation temperatures. The wine is ages in vats, without malo-lactic fermentation. It is bottled at the end of the winter, depending on the harvest. White Grenache, Clairette & Bourboulenc.
