During the last week of every year, lightly peated barley is used in whisky production here at the Tomatin Distillery. This spirit, just 90, 000 litres per annum is then filled into 1st fill ex-Bourbon, ex-Sherry & Virgin Oak casks &, when matured, will be bottled as Cù Bòcan. Nose: Light, sweet & smoky. Dried fruits, raisins & sultanas with a slightly floral background. Hints of roasted nuts. With spicy, citrus notes. Palate: Citrus & oats, the peat becoming more prominent here. Nutty, toasted almonds dusted with cloves & cinnamon, a spicy kick. Finish: Medium & dry, slightly smoky with a bitter malt.
