The name Santa Digna was given to the crosses marking the district boundaries of a l&. These crosses served to delimit territories & symbolised good fortune & protection for those who were leaving for other climes. Since reaching Chile in 1979, we have conducted some interesting viticultural experiments with different grape varieties. One of these, Syrah, did not appear to really thrive in Curico so after a few years we tried planting it in Linares, 140 km further south. There, growing in poor, well-drained soils, Syrah provides low-yield but excellent harvests. After a long quest, we produced our first shiraz wine, with a small percentage of cabernet Sauvignon. This is an opulent wine, robust with a fine body & silky, rounded tannins. Highlights are its deep violet colour & notes of forest fruits: blackberry, violet & hints of blackcurrant. The palate is elegant with character. Ageing in French oak contributes a pleasing toasty background. The perfect accompaniment for pasta & seasoned sauces, roasted & grilled meats, & exotic dishes.
