The name Santa Digna was given to the crosses marking the district boundaries of a l&. These crosses served to delimit territories & symbolised good fortune & protection for those who were leaving for other climes. After several years of experimentation, the moment has come for us to present our first ever wine made from the Carmenere variety, enhanced with a small percentage of Cabernet Sauvignon which adds structure & will give it a longer life. Savour it's beautiful cherry colour & its fine aromas (blackberries, cassis), with balsamic notes (eucalyptus) that culminate in a delicious hint of mandarin. The palate is elegant, with sweet & fruity tannins that deliver nuances of leather & spices (liquorice, black pepper, clove). Its ageing in French oak has given it a pleasant toasty & vanilla backdrop. Perfect with beef & veal, as well as with Chilean chicken stew. It rises well to every challenge, from fish (tasty conger chowder, the subject of an ode by Neruda!) to spicy sauces. ...

This wine is the product of Chardonnay vineyards in the Rio Claro area (Curico), which enjoys a cooler climate than the Central Valley. It displays a brilliant pale yellow colour, with green hues. Its aroma offers a predominance of chardonnay varietal notes (mango, apricot), enhanced by vanilla & coconut nuances. An excellent balance between density & acidity on the palate is followed by a very fruity aftertaste. Serve at 10deg C. This was a special vine: in Spain known as Listan Negro, in the colonies of the new world it was called Mision, & in Chile it would be known as ' Pais'. This varietal is cultivated in dry zones with humility, hard work, & dedication generally by small winegrowers who have passed their land from fathers to sons over several generations. In 1850 the first French vines were introduced to Chile, leaving the ' Pais' grape aside & later forgotten in time, with an uncertain future. The rescue of Chile's oldest grape varietal has produced Santa Digna Estelado, a unique sparkling wine, 100% Chilean, a reward for the land & its people. Pale rose colour, with fine & persistent bubbles. In the aroma, notes of fruit (red fruits & citrics) predominate. On the 0palate, fresh, lively, & genuine, characteristic of the ancestral varietal Pais. Santa Digna Estelado is made using the traditional method with the second fermentation in the bottle. The first sparkling rose made with the ' Pais' grape has a personality of its own. ...

Since reaching Chile in 1979, we have conducted some interesting viticultural experiments with different grape varieties. One of these, Syrah, did not appear to really thrive in Curico so after a few years we tried planting it in Linares, 140 km further south. There, growing in poor, well-drained soils, Syrah provides low-yield but excellent harvests. After a long quest, we produced our first shiraz wine, with a small percentage of cabernet Sauvignon. This is an opulent wine, robust with a fine body & silky, rounded tannins. Highlights are its deep violet colour & notes of forest fruits: blackberry, violet & hints of blackcurrant. The palate is elegant with character. Ageing in French oak contributes a pleasing toasty background. The perfect accompaniment for pasta & seasoned sauces, roasted & grilled meats, & exotic dishes. ...

Since arriving in Chile in 1979, the Torres Family have been enthralled by its majestic landscapes & vineyards. Nowhere else in the world are vines grown in such a magical setting: between the cold Pacific Ocean, the mysterious southern forests, the burning desert & the eternal snows of the Andes Mountain glaciers. Stone crosses called Santa Digna separated these landscapes from arable l&, symbolizing fortune & prosperity. Made exclusively from Caberne Sauvignon, whose fruit is small, thickskinned & with a slightly musky flavour. It yields well-structured wines with an exotic & delicate elegance. A fresh, pale gold colour, with a blend of aromas reminiscent of ripe, tropical fruits, over underlying hints of apple & fennel. Silky on the palate with a good acid structure & prolonged finish.
