After ten years spent in bourbon barrels, The Tyrconnell Sherry Cask Finish spends an additional 6-8 months in Oloroso Sherry casks from Spain. The casks exert their influence on the whiskey, creating a noticeably darker finished product. The interaction of single malt & fortified wine casks creates a veritable dessert in a glass, in which thick notes of sherry find themselves melding amongst hints of tarte tatin & custard. ...

Aromas of roasted nuts, nougat, & mild oak precede a palate that is honeyed & rich in texture. The finish brings forth the malt component, allowing a keen graininess to move to the forefront. Drink neat, or on the rocks. Also, adding a reasonable amount of water to the whiskey is an option, as it will allow the nuances & complexity of the whiskey to more clearly present themselves. ...

This is a classic 4 Acres release. The wine is bright violet in colour with an exotic nose of red berries, confectionary, stalk & some spice. The palate is seamless & shows that a lighter style wine can still be very complex with great fruit power. A continuation of the fabulous run of Brokenback vintages since 2006. The 2009 vintage shows aromas of red berry fruits with only a very subtle lift of French oak. These characters then flow seamlessly onto the palate, with plush, sweet fruit balanced by soft acid & tannin, resulting in a classic Hunter shiraz. Fruit was harvested in early February & fermented in hand plunged open vats. The wine was then matured primarily in 'large' French oak casks for eighteen months respecting tradition & the fruit quality, with only 10% receiving small oak maturation. A rich, classic wine of this nature is best served with rich, classic food accompaniments including roasted meats such as lamb or beef. ...

The grapes for the Moon Mountain Chardonnay are sourced from both our own vineyards & a number of high end vineyards around the Hunter Valley. Fermentation of the juice began in stainless steel tanks before the partially fermented juice was transferred to new, two & three year old seasoned French oak barriques (225L) & puncheons (500L). After fermentation, the wine received some lees stirring to enhance the palate structure & texture. No malolactic fermentation used. A medium bodied, fruit driven style that still exhibits crisp citrus & white peach flavours, with a palate that has gained some extra texture from extended maturation on yeast lees. The freshness of this chardonnay makes it a perfect companion to seafood, chicken or pasta dishes. Excellent drinking upon release & will develop bottle age complexity. ...

A more textural style of semillon than we commonly make due to the basket pressing & minimal juice clarification. The fruit & acid are in perfect harmony & an incredibly forgiving texture makes the wine very attractive even at such a young age. The fruit was hand picked & then immediately basket pressed. The juice was cold settled naturally for three days before being racked & fermented on partial soilds. This is due to the fact there was no enzyme used in the juice clarification process. This aims to build more texture into the wine. After fermentation the wine was matured in tank until bottling. ...

Tyrrells - Double Barrel 24 Shiraz 2005 75cl Bottle

The Tyrrell family are proud to release their new super Shiraz, DB24. This wine represents a new approach to red winemaking at Tyrrell's. The concept for DB24 was to create a contempory Shiraz that still maintains the Tyrrell stamp of finesse and elegance. Approximately 90% of the Shiraz grapes were sourced from McLaren Vale, and picked to have both the extract and fleshiness of fruit typical of the region. Approximately 10% of Heathcote Shiraz was blended back to the base wine to add structure and finesse. The double new oak maturation for 12 months each, is the derivation of the name DB24. A modern style of Australian Shiraz that has harnessed the strengths of these two great wine regions. The Mclaren Vale gives the wine the extract and fleshiness for which it is renowned and the 10%
Heathcote adds savoury undertones and gives the wine balance. The finish is long, and held together well by a thread of acidity. The lunar calendar illustrated on this label has been the vigneron's timepiece: signalling when to harvest, when to cellar and when to enjoy. This wine is matured for 12 months each in double new oak and is the derivation of the name Double Barrel 24. The concept for this wine was to create a contemporary Shiraz that still maintains the Tyrrell stamp of finesse and elegance. The grapes used for this wine come from McLaren Vale and Heathcote, two of the best Shiraz regions in the world.
