Colour: Dark red with some violet hints.
Nose: Very ripe fruits, raspberry & blackcurrant jams.
Palate: Blackberries, spices, morello cherry. Dense, strong tannins with good length.
Fish in tapenade sauce (Mullet). Meat dishes with sauce. Large game with cranberry jelly. All cheeses (Brillat Savarin, Chaource, Saint Marcellin...).
On the right bank of the Rhone, this vineyard is situated around the village of Cornas, on slopes adjacent to the vineyards of Saint Joseph. Part of the vineyard is on decomposed granite, locally known of as gore, the other part is on chalkycalcareous soils of alluvions.
Harvest: Hand harvesting at maturity.
Vinification: Carried out in the traditional way, in open wooden vats, with two daily treadings. Fermentation lasts about 10 days & is followed by a 3 week maceration period.
Maturing: In oak casks after the malolactic fermentation. The wine is drawn off several times for clarification. The wine is bottled between 14 & 16 months.
