This Sauvignon Blanc is bright & fresh with hints of tropical fruit, citrus & nettle. The palate is lively & crisp, with good depth & length on the finish. Serve this classic Marlborough Sauvignon Blanc with fresh seafood or a summer salad. Traditional techniques of vinification were used to make this wine. The juice was cold settled & fined lightly before racking. The juice was fermented at 14-16 degrees Celsius with a selected Sauvignon Blanc yeast strain which aids the development of aromatics & full bodied characters. Post fermentation, the wine was left for an extended period on the lees & mixed to add complexity to the wine. Food Match: Fresh crayfish & rocket salad on a sunny day.
