To craft The Balvenie Double Wood 17 year old single malt whisky, Malt Master David C. Stewart MBE returned to one of his most celebrated achievements – consecutive maturation in two different types of cask, a process often referred to as ‘cask finishing’. This technique is at the heart of The Balvenie Double Wood – it sees the whisky matured first in American oak barrels, which impart soft sweet vanilla notes, before being transferred to European oak sherry casks, where the second cask ageing adds rich spicy flavours & a depth & fullness of flavour. The Double Wood 17 year old is an elder sibling to Double Wood 12 year old & shares its honeyed, spicy characteristics, but it is distinctly different, with deeper vanilla notes, hints of green apple, creamy toffee & a striking richness & complexity. In the making of The Balvenie Islay Cask, David Stewart selected Balvenie single malt which had matured in traditional oak casks for at least 17 years & transferred it into 94 casks which had previously held Islay single malt. After six months he felt the casks had imparted the desired delicate amount of peaty notes, typical of Islay, whilst retaining the distinctively honeyed character of The Balvenie. The Balvenie Islay Cask was bottled in 2001 & the late Michael Jackson, world renowned whisky expert & author of The Malt Whisky Companion, wrote the tasting notes above. This is a quite hard to come by bottle! Nose: Remarkably smoky aroma: lingering & soft, but also with some sweetness. Evokes thoughts of steam trains & garden bonfires. Some leafy, ferny, notes. Palate: Again, soft, with some of the same smoky sweetness. Like sugar being caramelised. A touch of candied orange peel. Lemon. Bread-&-butter pudding. In 2001, a heavily peated batch of barley was distilled at The Balvenie Distillery & was allowed to mature until The Balvenie Malt Master, David Stewart, decided it was time to rejuvenate the maturation process & so the whisky was transferred to newly prepared traditional casks. The casks that had originally held the peated liquid had taken on much of its character & so David decided to experiment by filling them with 17 year old Balvenie for a short period. The result was an intensely peaty whisky. Marrying this liquid with 17 year old Balvenie finished in new American oak casks produced The Balvenie Peated Cask, a complex single malt that is rich & spicy with layers of smokiness. Nose: Gentle floral aromas, notes of lavender & violets with mild oak. Full of sweet fruits & honey with a touch of smoke. Palate: Smoke becomes distinct & heavy, spices with nutmeg & cinnamon are unveiled. heat is cushioned with fruity notes & sweeter honey & vanilla. A mild oak flavour is established.
