Cashel Blue

The Grubb family have been farming in the area around Cashel in Tiperrary since the 16th Century. Louis Grubb and his family have been making cheese since the early 1980s with Cashel Blue the jewel in the crown. This is a gorgeous sweet and creamy blue cheese with a unique tanginess. The white paste gradually yellows with age.
