    based on a French Livarot
    (which is famously
    nicknamed 'Le
    Colonel').  The cheese
    is matured for six to
    eight weeks undergoing a
    complex washed rind
    maturation process.
    What's it like? Little
    Colonel is a
    sophisticated but complex
    cheese, a harmony of
    flavours contained within
    a smooth supple rind.
