In 1923, Chuo Budoshu was established in Katsunuma, the birthplace of the wine industry in Japan. This example of the local grape variety is left sur-lie (on the lees) for 5 months before racking to increase the richness, producing a fine wine reminiscent of many Italian or French white wines.
