The addition of the cold water brought a slow & steady forming, but complete louche & released another wave of aromatics similar to the first but in even greater volume. Great range of mountain herbs adds to the complexity. A great re-construction of the absinthe of history. The distillery of C.F. Berger was founded in Couvet, in the canton of Neufchatel, Switzerland in 1823. The Berger distillery crafted several Swiss style absinthes, the most famous of these being the C. F. Berger 65 degree absinthe verte, which earned its status as one of the premier absinthes of the 19th century. Unfortunately, absinthe crafting at the Berger distillery came to a halt with the Swiss ban of 1910, & the distillery ceased all activities in Switzerland shortly thereafter. This fine Swiss absinthe was almost lost forever if it had not been for the resurfacing of original, unopened bottles, which Jade Liqueurs was able to secure for preservation. Using proprietary analytical techniques, Jade Liqueurs has painstakingly resurrected this beautiful liquor from extinction. Jade C.F. Berger is an accurate recreation of the original C.F. As the popularity of absinthe swept through France during the mid 19th century, the green fairy began making her way over to the ' Paris' of the New World, Nouvelle-Orleans (New Orleans). French-speaking travellers & immigrants alike carried their passion for absinthe with them to this vibrant port city, & before long, French apothecary Antoine Peychaud was doling out 'healthy' absinthe cocktails from his Royal St. shop. The popularity of absinthe surged in French-speaking Louisiana, & when Henri Degas & Oscar Wilde spent time in New Orleans in the latter part of the 1800s, they had no trouble finding imported French & Swiss absinthes among other familiar comforts. By the advent of the 20th century, cafes like the famous Old Absinthe House were making a name for themselves by cooling the humid summers with Sazeracs, absinthe frappes, & even the occasional absinthe creme de glace. Perique Tobacco Liqueur offers not only a safe alternative but it is also aimed at keeping alive an ancient tradition dating back to the Native North Americans. Louisiana Perique is the rarest & more precious tobacco in the entire world. Early French settlers learned the secrets of Perique cultivation from the native people, & while their descendants have continued the tradition for centuries, very little Perique exists today. The unique terroir of the Mississippi River gives Perique the intense spices & aromas that contribute to the delicate balance of this fine liqueur. In an effort to bring attention to this endangered tradition, Jade Liqueurs developed Perique liqueur to captivate one's senses with the wonderful aroma of this native tobacco, but in a form that greatly diminishes the health concerns associated with tobacco use. Perique is entirely best enjoyed in the same manner as one would a fine liqueur or brandy. Due to the difficulty in procuring this rare tobacco, Perique liqueur is available only in limited quantities. The aroma is unique, but with touches of cognac, woody tones, Perique tobacco, spices, & briny sea air. In addition I was surprised & intrigued by a complex base of fermented notes in the aroma which bring to mind just a touch of belacan or bagoong alamang suspended pleasantly within. Some could think this a negative aroma, but as in the iodine brine of a good seaside single malt Scotch, it adds a unique touch that brings the other components together. The taste is sharp, but smooth, with a mild sweetness that balances the fire in the liqueur. The tangy fermented Perique tobacco comes through more so than in the aroma, as do the hints of spices. JL 1901 Absinthe Superieure represents the second release from Jade Liqueurs that was carefully reverse engineered from sealed antique bottles of one notable brand of the original liquor, several intact examples of which remain in the Jade Liqueurs archive of antique spirits. JL 1901 Absinthe Superieure was recreated as a tribute to a widely studied pre-ban absinthe, as it appeared circa 1901. During the heyday of its existence, the orginal brand was an object of worldwide export, & was widely considered as a top-tier example of the category. When Switzerland & France enacted bans on absinthe production in the early 20th century, some of the original distilleries were liquidated. Around this time, the Combier distillery in Saumur, France verifiably purchased two 1100 litre copper absinthe alembics from one of the greatest absinthe distillers in Pontarlier, & installed them alongside with the 8 smaller alembics which had been a part of the distillery since Gustave Eiffel redesigned it in 1894. The importance of this history & the authenticity of these ancient absinthe alembics were of particular important when T.A. Breaux chose the Combier distillery as the most suitable venue for distilling the Jade vintage absinthe clones. JL 1901 Absinthe Superieure is a classic vintage-style absinthe, balanced & crisp, with a stimulating herbal aroma & a smooth, lingering aftertaste that recalls the splendor of the Parisian cafes during the Belle epoque. It should be noted that when a large cache of the pre-ban original was discovered in recent times, a few bottles were found to be in a remarkable state of preservation, retaining much of their original colour & freshness. Those who have been fortunate enough to taste these were unanimous in their remarks as to the striking similarities between the vintage bottles & the JL 1901 Absinthe Superieure pre-ban clone. ...
