The 2016 Merlot is medium in body & textbook in character. Classically built, it offers a mlange of stewed fruit, chocolate & spice from the nose through to the exotic palate. Notes of dry earth & hints of mint offer complexity, while classy oak notes intertwine with masses of ripe, succulent fruit. A terrific vintage for Syrah where the warmer conditions assisted in an incredibly powerful, yet finely tuned wine. Inky violet with a black core, the nose opens to smoked beef, dense blueberry, a touch of cassis & hints of scorched earth. The palate is plush & inviting with ingrained dark chocolate, gamey spice & even a hint of black truffle. The polished tannins appear to be coated with eternal layers of sweet fruit. The flagship wine from the Don Maximiano Estate it is complex with beautifully ripe fruit, smooth tannins, great concentration & a long finish. A deep reddish-violet colour, our Don Maximiano 2011 features red fruit aromas of cherries & strawberries, along with notes of cassis, plums & figs. A fine, medium-bodied dry red heaving with ripe, soft blackcurrant fruit, firm tannins & a long elegant finish. Deep red in colour with good concentration, this wine maintains a nice balance between its fresh fruit & notes from oak aging. Tart & sweet cherries as well as blackcurrant subtly intermingle with toasted notes lead to a well-balanced palate. Medium-bodied, with firm tannins, & good grip; juicy on the palate with bright acidity. The grapes were h&-picked from late April to the second week of May, taken to the winery in plastic boxes, gently crushed, & deposited into stainless steel tanks for immediate fermentation at 26C-30C (79F-86F). Because the grapes that go into this wine come from different blocks of the same vineyard, post-fermentation maceration time ranged between 12 & 20 days. 33% of the wine was aged in French & American oak barrels for Approx. 6 to 8 months, depending on the development of each lot to round out the wine & add texture to the palate. Once the final blend was made, the wine was stabilized & lightly filtered before bottling. ...
