Dark Matter's colour is a deep ruby
- mahogany, whilst on the nose has wonderful notes of ginger cake & allspice.
On the palate, its both powerful & smooth, balancing the tastes of ginger, with a pepper spiciness & flavours of sweet biscuit.
The finish is feisty & energetic.
Produced at Scotland's first ever rum distillery, founded by the brothers Jim & Ewan of Banchory, who are said to have been driven by science, knowledge & the imagination to pursue the flavours in Dark Matter through 'systemic study, observation & experiment'.
