- In the 1960's Jean Velut & his wife had to give up their farm land near the city of Troyes. They instead moved to land they held in Champagne & decided to develop a vineyard. Today they have seven & a half hectares of land & farm this sustainably. On the nose lifted aromas of lemongrass, green almonds, brioche & white flowers. This is a charming Champagne that is reminiscent of Chablis but with bubbles. Try this with roasted langostines.
