The name for Pave Cobble is inspired by cheese-maker Roger Longman's keen love of cycling & is an homage to the difficult & famous cobbled cycling stages of races such as the Paris Roubaix. However it's an ironic name because it's one of the smoothest & sweetest ewe's milk cheeses we've ever tasted.
