Yerba Mate helps maintain a healthy body weight. It has stimulating & tonic properties that contribute to the resistance against mental & physical fatigue & also contains antioxidant polyphenols. The traditional tea of southern South America, Maté is brewed from the leaves & stem of the Ilex paraguariensis tree. Unlike other teas, the leaves & stem are exposed to flames (sapeco in Portuguese) immediately after harvesting. This is to quickly lessen the moisture but seal in the abundant vitamins (A, B, C, & E), minerals (magnesium, iron, calcium, riboflavin, niacin) & polyphenols. The leaves then undergo a second drying step but remain green due to the sapeco flame drying action. After the sapeco & drying, the green Maté is finely cut & put into unbleached teabags. Its taste is often described as green, grassy & herbaceous, with a slightly smoky flavour, & not unlike green tea. Elisabeth Rochat de la Vallée continues her study of the Chinese classical texts with an exploration of the concept of yin yang. Guiding us through the early writings of the Spring & Autumn Annals, the Daoist classics of Laozi, Zhuangzi & Huainanzi, & the medical texts of the Yellow Emperor, the Neijing Suwen, she explains the development of these ancient ideas which provide the basis for Chinese philosophy & medicine. Along with the concept of qi, an understanding of yin yang helps us to penetrate the Chinese mind & to understand the world view which lies behind classical Chinese thinking. It is a world view quite different from that of the modern West. It speaks of relationship, mutual resonance, constant change & transformation. & yin yang is that which underpins this inter-relationship & co-dependence, giving the fundamental rules for life & the possibility of living in harmony with nature. Yin Yang from the Classical Texts is an edited transcript of two seminars given in 2005 in London. Chinese characters are included throughout the text to clarify the meaning of key terms.
