The Kitchen Bay, Laurus nobilis, is thought to have been first cultivated in the 17th century, & has been a herb garden essential ever since. These evergreen shrubs have aromatic leaves that are a culinary staple, bringing mouthwatering depth & a rich aroma to everything from soups, stews & curries to Bolognese & roasted or barbecued meats. They’re best when plucked fresh from the bush & simply added to the pot whole & left to infuse. Fresh leaves have a lighter, more floral flavour than dried leaves & can be kept in the fridge. If dried, they have a more intense flavour. They should be removed before serving unless they're ground or chopped. Bays are often grown in pots & respond well to training into topiary shapes. However, their lush, glossy & dense foliage makes them ideal for hedging & they make excellent structural features in formal gardens. They require little more than a light trim in early spring & summer to maintain the desired shape & will happily grow in sun or partial shade in well-drained soil. They’re also well suited to coastal locations. Use a soil-based compost, such as John Innes No. 2, with extra grit added to improve stability of the post & help drainage as bay roots dislike sitting in wet. Add controlled-release fertiliser granules to the pot or use a liquid feed every two weeks from mid-spring to late summer. Check plants & repot every two years in spring so that the soil does not become exhausted & stale. Bay can withstand temperatures down to at least -5°C, but frost & extremely cold winter winds can damage the foliage, so protect plants with fleece if temperatures are likely to fall below this. Similarly, pots can be wrapped in bubble wrap to protect them. Any damage caused by winter cold can be pruned out in the spring.
