Garlic chives or Chinese chives differ from ordinary chives in having flat leaves & a delicate mild garlic flavour. They can be used in salads & stews as well as fish egg or meat dishes. The blossom buds are a Chinese delicacy & can be eaten raw or stir fried.

This hardy perennial is easy to grow & ideal for pots or borders. Sow these seeds in spring in a good seed compost just covering the seed with compost. Germination usually takes 14-21 days at 19-21C. Transplant the seedlings when large enough to handle planting 4 seedlings in each 7.5cm pot.

When well rooted move to a cold frame & plant out 20cm apart. Plant each potful so the soil level in the pot is about 5cm below the ground. For best results plant in a sunny spot in rich fertile well drained soil.

The following spring draw up the soil around the plants & a first cut can be made 3-4 weeks later.

This herb is the ideal accompaniment to roast lamb & is great with boiled new potatoes & peas. Mint has a piquant aroma & as such is disliked by much of the insect world making it a good companion plant.

This means that there is advantage to planting mint close to cabbages as it will repel the Cabbage White Butterfly. Sow these seeds from late winter to early summer in Seed Compost but do not cover the seed with compost.

Make sure that the compost is moist but not wet & seal in a polythene bag until after germination which usually takes 7-16 days at 21-24C. Transplant when large enough to handle into 8cm pots. Later plant out 30cm apart into ordinary soil in part shade.

This very useful salad plant is popular with todays chefs & is widely used raw in salads or cooked lightly when it makes a delicious spinach substitute.

Late summer sowings will carry on cropping into the winter if the plants are protected by cloches. Sow these seeds from April to July in any good fertile well drained soil. Sow thinly 6mm deep in drills spaced 45-60cm apart. When the seedlings are large enough to handle thin out to 23-30cm apart.

Pick the young leaves as required over the whole row rather than just one or two plants as this would weaken them. As the flower buds appear pinch them out to prolong cropping.
