When wine is poured from cask to bottle, & then corked ready to be shipped around the world, it hasnt stopped growing & maturing. There are many things that wine gets up to when tucked away in a bottle that are good, but there are one or two that dont do the wine any favours. So that when wine is finally released from its bottle it needs some time to stretch & recover from being cooped up for so long.
