On of the Languedoc's highest altitude sites, Domaine l' Aigle sits at 450m above sea level. The cool temperatures here afford the grapes up to an extra month on the vine than in low-lying areas, developing ripeness while maintaining acidity for wines with great finesse. Oak fermented & aged on its lees, this wine closely resembles quality oaked white Burgundy from the Côte d' Or. White fruit & lemon flavours, nuanced with hints of flowers, hazelnut & almond. Serve lightly chilled with fish, roasted poultry, or soft goat's & sheep's cheeses.
