Enjoyable in its youth, this single vineyard wine will gain further complexity with time. 100% Pinot Noir. Bunches were delivered to the winery in small picking bins, where they were destemmed, lightly crushed, & cold soaked on skins at 10-12&176;C for 10 days. Ferments were hand plunged allowing gentle extraction of flavour, aroma & colour compounds. To ensure good tannin structure & savoury complexity, some batches were hot fermented to maximise extraction, while others were kept cooler to retain fruit characters. The wine was then pressed & run to French barriques where it underwent malolactic fermentation.
