This this Single Barrel has been aged in 400 litres French oak cask with 50% aged in new oak cask that gives maximum oxygen for faster aging, sweetness & tannins, & 50% in used Cognac cask that gives smoothness. The new & used cask are then assembled & slowly diluted, from 65% to 55% strength during the first 3 years, to have the best balance between new wood tannins & old wood smoothness. The rum is finally bottled at 49.9% ABV. On the nose you will have memories of sweet papaya, dried spices, hints of vanilla. Followed by an intense peppery, dry fruits & long finish on the palate & some smokiness.
