Chateau Romassan is located in the Bandol appellation where the land is comprised of limestone, sandstone & marl of the late Cretaceous marine period. These poor soils are offset by the large amount of stone in the soils throughout this appellation. The Bandol appellation is known for its terraced landscapes built from the hard stone with vines, which are planted into vast terraces with varying exposures. Cultivation methods are traditional & the soil is mechanically tilled & young shoots are trained with the greatest care to the plant. The following grapes are used in making this Rose Cabernet Sauvignon for its complexity, blending elegance & vigour, Cinsault for its finesse & fullness Grenache to add warmth to the wine Syrah in small quantities to round of the wine, give colour & a touch of liquorice. The grapes are all hand picked & go through a stringent selective grape sorting, & then go through an extremely delicate pressing process. Fermentation is done in thermo-regulated vats followed by ageing in oak casks for 6-9 months. This Rose has a bouquet reminiscent of plants with notes of fruits & spices, apricot & grapefruit pulp. An outstanding alliance with scallops, salmon marinated in dill, sweet & sour pork. It is best served at 50-54 degrees Fahrenheit. Limited Stock.
