The nose is very cassis driven & blackcurrants tend to dominate the start of the palate. There is an added richness from the dark chocolate & liquorice with structure from the black cherry & tannins but the ripeness of the fruit ensures that the finish is full & fleshy. Parcels of Shiraz were drained off skins after extracting a good amount of colour & flavour, the free run juice was cold settled then the clear juice racked. The wine was fermented under cool conditions which ensured that the delicate strawberry fruit flavours were retained.
