- Calisay is a herb-based Spanish liqueur, whose main constituent is the bark of the Calisaya tree, a species of chinchona bark
- in other words, quinine. The base spirit (brandy) is steeped with the quinine & other herbs including cinnamon, sweetened & then aged in oak casks before bottling. As well as for drinks (and neat as a digestive liqueur), the Spanish also use it in baking, apparently.
