This highly characterful wine is great for partnering with quite diverse foods. Its dark, almost liquorice-like flavours would suit meaty dishes with a good depth of flavour & some spice, something like Mexican mole poblano. Otherwise, match the sweet cassis fruit to something lighter, but still meaty, such as tuna steaks or herb-stuffed pork. A big, dark & complex wine like this is a great partner for food, but the food needs to be up to the job. Big flavours work well, such as leg of mutton roasted with anchovies, marinated haunch of venison with a good jus, or anything ratatouille-based where the savouriness of green pepper & aubergines is dominant. This wine is a blend of Tempranillo, Merlot & Syrah grapes, with late harvest Petit Verdot, all aged in different American barrels for eight months to intensify the flavours. With its lush, fruity layers and complex aromas, this wine would make a great partner for grilled fish with capers and lemon, pasta tossed with shellfish or even roast pork with apple sauce. Caruso and Minini dates back four generations in the history of two families. The winery is based in the heart of Marsala country, with the vineyards for this particular wine located in the Terre di Giumara estate on the north and west-facing slopes of Giummarella hill. It is an area that is perfect for the growing of high quality white wine grape. Bright straw in colour with a heady bouquet of lime, melon and grapefruit aromas, mingling with
notes of ground nut, wild flowers and intriguing musky nuances. In the mouth it is bright and zesty while also rich and rounded, with abundant melon and lemon flavours and a tingling acidity which carries well across a long, clean finish.
