Modern roses, especially the big New World versions, seem to have been developed for easy, unadorned guzzling. But a classic Provencal rose like this, packed with spice & floral charm, makes a lovely food wine. Fresh fish & seafood are the obvious choices, but any lighter summer dishes are going to benefit from its company. Chateau d' Ollieres lies around 30 miles east of Aix. Its owners, the Rouy family, have 35 hectares of vineyards on clay-limestone soils around 1000 metres above sea level, nestled among the fragrant garrigue. This special terroir, plus the family's organic, h&-harvesting approach, results in Grenache, Cinsault & Syrah grapes of excellent potential. Sparkling orange-pink in colour, with a bouquet redolent of ripe summer berries, minerally earth & a touch of fresh sage. In the mouth it is focused & bright, with sweet & juicy berry flavours balanced against a quenching acidity & intriguing spicy notes. While the flavours are bright, the finish is perfectly clean.
