With the extra richness that the Semillon grape brings to this blend, it's best not to think of the Sauvignon Blanc element when pairing it with food. White meats are often the most rewarding partner, from chicken, quail & turkey (particularly in creamy sauces, in pies or fricassees) to pork chops, ham & veal. Again, creamy sauces partner best. The Entre-Deux-Mers area of Bordeaux lies not âbetween the seas' as the name suggests, but rather between the two rivers that dominate the region: the Dordogne & the mighty Garonne. This is one of the largest appellations in the Bordeaux region, & the compact alluvial soils here are very well suited for the growing of white wine grapes. Pale gold in colour, with a bright âsauvignon' nose of gooseberry & citrus fruit aromas, with richer, nuttier semillon nuances behind. In the mouth it is a clean & refined, showing grapefruit flavours & the more âvinous' rounded qualities of semillon on the palate. It needs some air to come alive, but is very satisfying & zesty once it does.
