Good quality unoaked southern French chardonnay like this, with its aromatic charm & long citrussy flavours, is so easy to pair with food. Fish dishes are the obvious choice, especially delicate white sea fish or pink freshwater fish, either in butter or a creamy sauce, but creamy pasta would also work, as would light chicken dishes. Domaine Nordoc is part of celebrated Rhone producer Stephane Vedeau's stable of innovative, quality-driven estates. The grapes for this wine grow on chalky hillsides around the Mediterranean sea, whose influence naturally restricts yields. To capture their freshness, they were harvested at night & then kept on their lees after fermentation to intensify extraction. Ingenious stuff. Sparkling gold in the glass, with a ripe bouquet of citrus fruit, quince & honey aromas, with a touch of dried ginger. On the palate it is very well balanced: rich & mouth-filling but deliciously clean & focused. The lemon & tart apple flavours dominate, but gently fade to reveal exotic mango notes & a smooth buttery finish.
