Henry Pike emigrated from England & established a brewery in Oakbank in the Adelaide Hills in 1886. It took the family almost 100 years to set up their own winery but it was worth the wait! The estate is in the Polish Hill River sub-region of the Clare Valley (north of Adelaide) where the relatively cool climate makes forfresh well balanced wines

- clean with lime grapefruit & lemon fruit but it’s the slateyminerality that really marks this wine out. Riesling at its racy best! With great foresight Ian Hollick purchased 22 hectares of prime ‘terra rossa’ land in 1974 & planting began a year later with Riesling & Cabernet Sauvignon. In 1984 Ian established the Hollick Winery & almost immediately began lifting trophies. The estate now measures over 100 hectares in size since the purchase of the Wilgha property. Ian is fiercely independent loves life & refuses to make wines that are overblown or dull which is great news for wine-lovers like myself who prefer to drink a bottle with dinner rather than be served a glass of soup-like Cabernet.2004 Cabernet Sauvignon The Cabernet has wonderful complexity with mint cassis & black fruits food friendly tannins & balanced acidity. A Coonawarra classic.
