{ } Mezzaluna is Italian for "half moon", which describes the shape of the chopping blade. You can also use them for slicing pizza. Mezzalunas are also known as "crescent cutters" or by their French name "hachoir". The correct way to use a mezzaluna is with both hands grasping the handles, & using a rocking motion to slice through the food. The rounded handles should fit comfortably in the centre of your palms, & once you get used to it you will find the rocking action quiet intuitive. It's safer than chopping with a regular knife, as you use both hands & there is less danger of cutting yourself. Simply wipe it with a clean damp cloth as soon as you have finished using it. From time to time, treat your chopping board with a bit of olive oil. It's not advisable to put your chopping board in the dishwasher, nor to leave it soaking in water.
