While the Signet carries no-age-statement, this secretive whiskey is said to be an element of some of Glenmorangie's oldest & rarest stocks, ranging from 35 to 40 years old. Created from a marriage of whiskies produced from two unique types of malted barley: a single estate Cadboll variety & a rare malted chocolate barley it is distilled twice through Glenmorangie's copper-pot stills, by a team of 16 distillers known as the ' Sixteen Men of Tain'. The Signet won Whisky of the Year in 2016 & is loaded with dark chocolate, toasted spice & coffee bitterness. At their world-renowned Napa Valley estate, Dan & Margaret Duckhorn built a reputation for fine Bordeaux varietal wines. In 1996, they decided it was time for a new challenge. So they founded Goldeneye, with the mission to make sublime Pinot Noir in the cooler Anderson Valley. Their three vineyards are some of the first in the state to achieve certification through the California Sustainable Winegrowing Alliance & their state-of-the-art winery has a coveted LEED Gold environmental certification. All the investment has paid off. Layered & complex, this wine has aromas of ripe raspberry, black cherry & baking spice, with juicy fruit flavours, plus savoury hints of nutmeg, leather & breakfast tea. With supple tannins & elegantly balanced acidity, it’ll go great with a whole range of dishes, from grilled salmon to barbecue pork ribs or pizza. ...

One of the oldest wineries in Spain, González Byass have been family-owned for their entire history – nearly 200 years. In keeping with the theme, winemaking is treated with the same respect for ancestral tradition. Current sherry master Antonio Flores, who was born just above the cellars, succeeded his father in the role & his daughter Silvia is set to take over next. Palomino grapes are harvested from chalk soils in the best pagos of Carrascal & Machamudo before being fermented, fortified & aged for 12 years in the typical solera system. Palo Cortado is an intermediate type of sherry with the aromatics of an Amontillado but the oxidative taste of an Oloroso. We like to think of it as a lightweight, delicate Oloroso. Expect a mix of hazelnut, bitter orange & mature oak notes – & rich, toasty flavours. Try it with chicken or pork, or cured Spanish hams & cheese. ...

Goldwater Sauvignon Blanc 2022, Wairau Valley

Founded in 1978, Goldwater is among the oldest wine producers in New Zealand. Chief winemaker Stu Marfell entered the wine trade when he took part in his first harvest aged only eight years old – and today, he’s known as a pioneer across the entire industry. This is an excellent demonstration of his skill and passion for Marlborough wines. It’s made with grapes from the Wairau Valley, an area famed for its intensely aromatic, lively Sauvignon. The grapes are harvested during the early morning hours to preserve their mouth-watering acidity, and five months of lees ageing adds fantastic texture and complexity. Expect notes of freshly squeezed lemon, grapefruit, guava and a hint of salty sea air. Partner its crisp flavours with fresh white-fish dishes.
