Biodynamic agriculture incorporates different rotations of crops carefully & the biodynamic calendar is based on the position of the moon which determines whether the day is a fruit, flower or leaf day. Crafted from a blend of Parellada, Macabeo & Xarel∙lo grapes & using the traditional fermentation method, the caves (yes, that’s the plural of ‘cava’!) are aged for more than fifteen months underground.
