Without getting too science-y, it's an "aroma compound" that smells a lot like rum & it's the chemical responsible for giving raspberries their unique taste. Here's one of ours – we call it, The Hitchhiker's Guide to the Daiquiri. Ingredients: 1 1/2 oz Galaxy Dust rum 1/2 oz orange liqueur 6 raspberries 2 tsp superfine sugar Juice of 1/2 lime Raspberry & blackberry for garnish Method: 1. Spread the sugar evenly on a small plate, rim the edge of the glass with the lime wedge then dip it into the sugar. Set aside 2. Muddle the raspberries & orange liqueur in a cocktail shaker or mixing glass 3. Add the Galaxy Dust Rum, sugar & lime juice & fill the shaker with ice 4. Shake well & strain into the sugar rimmed glass 5. Garnish with a raspberry & blackberry on a cocktail stick 6. Sip slowly & contemplate the universe
