This very rare coffee, sourced from Sumatra, is among the most sought-after and exclusive coffees in the world. The coffee cherries are eaten by the Asian palm civet, a small member of the Viverridae family, and are then digested, fermented and excreted, before being collected and sorted by the knowledgable native farmers and sold on as Kopi Luwak. This process creates shorter peptides in the beans and frees amino acids, improving the flavour profile of the bean, but there is another reason why this process is loved by so many: the palm civet ostensibly selects only the finest cherries to eat, meaning the best beans are collected by the farmers. The process, which takes place on the islands of Sumatra, Java and Sulawesi in the Indonesian archipelago, creates a strong, intense coffee, but with delicate flavours and very little aftertaste, making it ideal for both filter drinks and espressos.We are fundamentally opposed to captive civet cats being used in the production of Kopi Luwak. Our Kopi Luwak is imported only from natural, non-farmed sources.
The city of Mysore, located at the base of the Chamundi Hills in India, was first introduced to the world of coffee by the revered 17th century scholar, Baba Budan, who upon return from a pilgrimage to Mecca brought with him seven seeds from the port of Mocha, in Yemen, before planting them in Mysore's temperate mountains. The seeds flourished, and we have Baba Budan to thank today for the smooth and mild Mysore coffee. The sweet and delicate flavours of Mysore combine wonderfully with a medium acidity, which allows this bean, perhaps unsurprisingly, to blend perfectly with mocha coffee. The full-bodied Mysore is just the thing for a spot of indulgence at any time of the day, and all it takes is a few minutes in the cafetiere to be enjoying a wonderful, all-round great tasting brew.
In 2011, Honduras became the top producer of coffee in Central America. We source our Honduras coffee from the Comayagua mountain region of Honduras, which sits at a an altitude of 1, 949 feet above sea level and offers soil, a climate and general agricultural conditions that are perfect for growing excellent quality coffee. Cultivated in the shade-grown areas of very lush land found high up in the mountains, where conditions are similar to those of other large coffee producing countries such as Guatemala, Nicaragua and Costa Rica, our Honduras coffee is perfect for espresso drinkers. Once roasted to perfection the beans take on a mild strength, full flavours and a pleasing amount of acidity, and as they are sourced from Rainforest Alliance certified growers we can be sure that farmers' livelihoods and the forest areas are being preserved.
Puerto Rican coffee has long had a reputation as being among the finest in the world, being exported widely across Europe throughout the 18th and 19th century, most notably to the Vatican and High Courts where it was the exclusive coffee to be served. Our Santos coffee is named after the Brazilian port where it begins its journey to the rest of the world, a journey that has been occurring since the 19th century. Brazil is the world's largest coffee producers, accounting for as much as a third of all coffee production, and has held this position for more than 150 years. Brazilian coffee plantations cover around 10, 000 square miles of the country, but are generally located in the southeastern states of Minas Gerais, São Paulo and Paraná, where the temperate climate provides ideal growing conditions. Our Santos offers a wonderful low acidity, a pleasant aroma and a light-bodied brew that makes it ideal for cafetiere and filter coffees.
This blend of Indonesian Java and Brazilian Santos creates a wonderfully strong coffee that's full of flavour, but without any bitterness. Java, or Kopi Jawa as Indonesians refer to it, is typically a strong, slightly sweet coffee, and it works wonders here with the light-body and low acidity of Santos. Kenya Peaberry is grown in the Nyeri region, situated in the Central Highlands of Kenya, where acidic soils provide the perfect conditions for coffee that is known for intense flavours and well-rounded aromas. The peaberry variety of bean, also known as 'caracoli', is created when a coffee cherry produces only one bean, as opposed to the usual two. This single, pea-shaped bean is separated from the regular 'flat berry' beans before roasting, which ensures a high-quality even roast, and, as the peaberry has absorbed all the goodness from the cherry, a fine quality and special liquoring is achieved. Around 5% of all coffee beans harvested are of the peaberry variety, and it is often said that, due to the round shape of the bean, it roasts more evenly for a fuller, smoother flavour. Kenya Peaberry makes for an incredibly flavoursome coffee, showcasing a fine acidity combined with a slightly fruity flavour.

Our mild Bugishu is sourced from regions of North East Uganda including the slopes of Mt.Elgo, which is the oldest and largest solitary volcano in East Africa. Covering an area of 3, 500 square kilometres on the Ugandan/Kenyan border, Mt. Elgon is considered among the best sources of coffee in the country, with high altitudes and a propitious climate producing beans that reveal a very clean flavour and distinctive aromas when roasted, making them ideal for your favourite filter coffees at any time of day.
This smooth, full bodied coffee offers a medium strength that is great when used with a cafetiere or filter, and displays subtle and delightful flavours of pistachio nuts. The Skybury plantation, where this coffee is grown, is Australia's oldest producing plantation and the country's largest coffee exporter. The 300 acre plantation is treated to mild winters and warm summers, which make for excellent conditions for growing high quality beans. The coffee harvest, which usually runs through June and July, benefits from cool seasonal mornings that assist the maturing process, and the advanced Skybury plantation methods enable coffee to be processed in as little as one hour, from the field to its dry form. This mild Kenyan coffee gets its AA+ rating based on the large sizes of the specially selected beans used: Kenyan coffee is graded by the screen size of the bean, with beans that are too large to pass through a sieve perforation measuring 18/64 of an inch designated as AA grade. Gunpowder tea is a form of Chinese green tea produced in the Zhejiang Province of China, which undergoes a unique process to preserve its flavour and aromas during storage. The tea leafs are rolled into small pellets after being withered, steamed, rolled and dried, so that they resemble grains of black gunpowder. Each rolled leaf releases a burst of great tasting tea when brewed, which is clear golden in colour and can be enjoyed all day long, with or without lemon.

Harar Longberry, an arabica coffee grown in the region of Harar in Ethiopia’s Eastern highlands, is perhaps the oldest bean still being produced. Grown at around 2, 000m above sea level these sun-dried beans come in a distinct pointed shape and golden colour, and are sorted and processed almost entirely by hand by skilled and knowledgeable workers. Harar beans can be divided in three categories, and it is the Longberry variety that is both the largest, and considered to be the finest. When roasted, the beans reveal wonderful flavours of fruity wine and mocha, and create superb, full-bodied drinks. Ethiopian coffee beans grown in the Harar, Sidamo, Yirgacheffe, or Limu regions each reveal distinct, yet uniformly excellent flavours and aromas. Our smooth Ethiopian Sidamo coffee is made from the finest Arabica beans, grown exclusively in the Sidamo Province, and one of the most famous origin tales of the coffee suggests that a local innam at a Sidamo monastery threw these red coffee berries upon a fire, at which point their roasting gave off such a wonderful smell that they were raked off and boiled in water, giving birth to this much-loved coffee. These small, thin, greyish beans are highly valued for their intense flavours of spice and wine, with hints of chocolate, while the deep, floral aromas, mild strength and bright, crisp acidity make them ideal for delicious filter coffees at any time of the day.

Monsoon Malabar, picked in the Malabar region of India, one of the wettest regions of southern India, undergoes an especially unique process to bring out the bean's fullest flavours. Straight after being harvested the Malabar beans are transported to open warehouses along the Malabar Coast, where they will be exposed to the harsh, moist winds of the area's monsoons for around three to four months. While they are stored in these open warehouses, the beans retain moisture from the monsoons and swell in size, losing much of their acidity in the process, resulting in a heavy bodied coffee that displays a wonderfully mellow flavour, with aromas of chocolate, spice and nuts. This strong coffee, unique to the coastal regions of Karnataka and Kerala, makes an excellent espresso when dark roasted, but also blends incredibly well with other varieties.
Our mild Mountain Blend is a great all-day coffee, ideal for cafetiere and filter drinks of all kinds. The blend is sourced from beans that are grown at the highest altitudes by some of the finest growers, producing a wonderful coffee that shows rich, fruity flavours. All of the world's finest coffees are cultivated in the 'Bean Belt', an area that spans the latitudes between the Tropics of Cancer and Capricorn, where climates and altitudes allow coffee beans to be grown and harvested. The ideal altitudes for the best coffees tends to be between 4, 000ft and 6, 000ft, where a year-round warm climate, moderate rainfall and abundant sunshine produce a bean with beautifully pronounced and distinctive flavours, as found in our Mountain Blend.
Our Dark Colombian is a slightly stronger coffee than our Colombian Med, which makes it more versatile as it is suitable for cafetiere use, filter coffees and intense espressos. Again using Medellin Excelso, from Colombia's Cordillera Central in the Andes, this excellent coffee really does display some of the finer qualities of the renowned Colombian coffee bean: a rich aroma, luxurious depth and sweet flavours of fruit and chocolate. These Colombian beans benefit from being grown in an area that is known as the 'tierra templada', the Colombian term for the climatic zone located between 900 and 1, 980 meters that provides ideal growing conditions. The conditions in the tierra templada, or 'temperate land' result in a robust bean that gives a full-bodied coffee and an intense espresso, topped off with a hint of sharp acidity.
The coffee industry in Guatemala began to develop in the 1850s, with small plantations flourishing in the Amatitlán and Antigua regions. Cultivation of coffee and the country's coffee industry was given a sizeable boost during the Liberal Revolution of 1871, when goals of modernisation and trade improvements caused the bean to become an especially important crop. To this day coffee remains one of Guatemala’s main exports, along with sugar, textiles and bananas. The particular bean used in our medium and mellow Dark Maragogype is known as the 'Elephant Bean', which, as its name suggests, is selected because of its larger size. The Elephant Bean, grown in higher, temperate regions, produces a coffee that is smoother and richer in flavour than standard arabica beans, combined with a slight acidity, resulting in an all-round coffee that can be enjoyed from cafetiere or filters, or as a punchy espresso.

Decaffeinated coffee is ideal for those who want to enjoy their favourite blends at any time of day, without the effects of caffeine. However, the process of removing caffeine from a bean can also remove much of the bean's flavour. That's why the Swiss Water Process is a favourite method of decaffeinating coffee: it doesn't remove the flavour and strength of coffee beans in the act of removing the caffeine, and doesn't use any chemicals. In the method, coffee beans are first soaked in hot water to remove 99.99% of the caffeine. This liquid is then processed through activated charcoal to remove the caffeine, leaving behind the flavoured, caffeine-free liquid. The beans are then soaked in this liquid to absorb the flavour, resulting in a decaffeinated coffee bean that is 100% free of chemicals, and packed full of flavour. The peaberry variety of bean, also known as 'caracoli', is created when a coffee cherry produces only one bean, as opposed to the usual two. This single, pea-shaped bean is separated from the regular 'flat berry' beans before roasting, which ensures a high-quality even roast, and, as the peaberry has absorbed all the goodness from the cherry, a fine quality and special liquoring is achieved. Around 5% of all coffee beans harvested are of the peaberry variety, and it is often said that, due to the round shape of the bean, it roasts more evenly for a fuller, smoother flavour.
