Crafted with beans from the Villa Esperanza cooperative, this medium-roasted coffee strikes the perfect balance: light enough to maintain a red berry brightness, the roast is just high enough to develop subtle cocoa notes. You might call it the cherry chocolate of our coffee range Villa Esperanza was established in 2003 as group of 20 or so smallholders from the Huila district of Colombia, & theyve since gone from strength to strength. All their coffee is h&-picked, before being pulped & washed at their own micro wet-mill. Its then dried on roof patios designed to protect the beans from the frequent rainfall. After undergoing a strict process of cupping & grading to secure the quality of the coffee, the beans travel back to the UK to be wood-fired in copper roasting machines, specially developed to produce the very best quality coffee by traditional artisan methods. The quality of the wood is vital for achieving a consistent result the roastery uses oak from forests within a 10 mile radius, storing it in their Oxfordshire barn for a period of up to seven years until it achieves a suitable moisture content. Whats more, committed to using wood from local managed forests & coffee beans sourced exclusively from ethical & environmentally certified micro-lot cooperatives, theyre one of the most sustainable roasting practices in the country.
