Its strong lime peel taste is absolutely perfect for this application. Known as the lemon of South America, limes are small green yellow fruit with sour, acidic pulp, generally smaller & less sour than lemons. The top-five lime producing countries are India, Mexico, Argentina, Brazil & Spain. A staple of Mexican, Thai & Vietnamese cooking & typical of Persian, Iraqi & Indian cuisine, limes are used for both the acidity of the juice & floral aroma of the rind. Ceviche (the cooking of raw fish in lime juice), lime pickle, marmalade & sorbet are all popular uses.
