As non dosage wines are the driest style of champagne, often labelled Brut Zero or Brut Naturel, they actually go better with food than many sweeter cuvees. This wine shows a firm minerally character, & with its bright acidity & lovely toasty notes, makes a perfect partner for fresh seafood, especially scallops, abalone & cooked oysters. The Philipponnat family have been based in Champagne since the 17th century. The family initially established themselves as vineyard owners of distinction, only moving into making their own champagnes in the middle of the nineteenth century. Their expansion, both of vineyards & cellars, has been steady & always focused on quality. Sparkling gold in colour, with a powerful bouquet showing savoury & minerally notes, toasty yeast & herbal aromas. In the mouth it is superbly balanced, with a fine, honey-smooth mousse, crisp yellow fruit flavours & a toasty, perfectly dry finish. There is plenty of complexity here, but no harshness whatsoever. A wonderful wine.
